Carbonara





Ingredients
• 1 lb. Pasta
• 1/4 c. Olive oil
• 1/4 lb. Pancetta (chopped)
• 1 tsp. Red pepper flakes
• 5-6 vloves garlic (chopped)
• 2 large egg yolks
• Freshly grated Romano cheese
• Salt and Pepper to taste
Directions
Cook noodles till al dente (about 8 min.).
Meanwhile in a large skillet add olive oil and after hot add the pancetta and cook till brown. (about 2 min.) Add red pepper flakes and garlic.  Cook 2-3 min. more.
Beat eggs in a bowl and add about 1/2 c. Hot pasta cooking water slowly to temper eggs.
Drain pasta and add to skillet with pancetta and oil. Pour egg mixturr over pasta. Toss mixture rapidly so the eggs don't scramble.
Remove from heat and add a big handfull of cheese, lots of pepper and a little salt. Continue to toss mixture till it thickens. (1-2 min.)
Garnish with extra Romano cheese.
