Fruit Salad w/ Olive Oil

You usually think fruit salad and picture fruit tossed in whip cream and marshmallows. Which don't get me wrong, is delicious! But this is a much lighter version.  Something that is transitional.  You can have it as a side, but to really add some flavor to your dish you can top this light fruit salad with fish, seafood, or chicken.  I personally would suggest Cajun catfish, or Salmon.  But to each there own!



Ingredients:

  • 10 oz. Pineapple (medium sized pineapple), bite size pieces
  • 1 Avocado, julienne
  • 1/2 Mango, julienne 
  • 1/2 Red onion cut in half and sliced thin. 
  • 1/2 Lime, juice
  • 1 tsp. Olive oil 

Toss the pineapple, avocado, mango, and red onion together in a large bowl.  Squeeze lemon juice over the top and add a splash of olive oil.  Toss again and enjoy!

It's a really easy recipe that you can add or remove ingredients to your liking.  Open up your mind. :)
